What's For Dinner Mom? Week of July 8, 2019

After weeks of traveling and vacation, this is the first full week I will be in the office. No travel. No holidays. No offsite meetings. I will be back in the office in San Francisco Monday thru Thursday and need dinners to be as simple as possible. So this week’s meal plan includes shrimp, a different take on taco Tuesday, my favorite farro salad, a twist on pizza, and the perfect summer Saturday dinner.

As you know, I’m a certified FASTer Way to Fat Loss coach and these recipes fit within my macros and keep me on plan to reach my own personal goals. If you’re doing the FASTer Way and need help with meal ideas, let me know in the comments below. I’m always happy to help.

As with all of my weekly meal plans, proteins can be swapped out if you don’t like the protein in the recipe. I’m a pescatarian so if we’re having pork or chicken, I will usually substitute it for some white fish. Eat the protein you like. A meal plan will only work long term (and any fitness or wellness program) if you like the foods you’re eating. So take this and adjust as necessary. Just watch those macros!

It’s a low carb day for my FASTer Way clients so we’re keeping those carbs down while hitting our calorie goals. Monday we’ll be enjoying this Indian Shrimp Curry, using the shrimp I bought in my Trader Joe’s haul and all the spices in my cabinet. This comes in at just about 10 net carbs. Serve this with cauliflower rice to keep this low carb.

I LOVE tacos and am always on the lookout for the best low carb tacos and these just might be it. The recipe for Keto Fish Tacos is super simple and takes little to no time to make. Pair this with all the avocado for some healthy fats, some red onion for crunch, and maybe a drizzle of my favorite Sriracha Ranch from Trader Joe’s. Serve this either in leaf lettuce or find (or make) some low carb tortillas. This dinner comes in at six net carbs (excluding tortilla).

One of my favorite salads in the world is the kale farro salad with shrimp I get for lunch sometimes at a local takeout place. I’ve tried without success to recreate it until I found this recipe. Meet the Eggplant Salad with Roasted Tomatoes. I don’t love eggplant (the texture makes me squirmish) so I will replace the eggplant with some shrimp that I’ve tossed with Trader Joe’s Chili Lime Seasoning Blend and cooked in the oven. Don’t like either shrimp or eggplant? Add some grilled chicken or tofu. Please note, farro is NOT gluten-free so if you’re going gluten-free, you can replace the farro with wheat berries or brown rice. Delicious!

Have you ever grilled pork tenderloin? If not, you need to try it! This Grilled Cumin Spiced Pork Tenderloin really easy and the flavor is out of the world good. Rub the pork with the seasoning rub, let it sit for about 15 minutes, and then toss it onto the grill. It will take about 30 minutes to grill. While it’s grilling, cook some quinoa or sweet potatoes (plain) and a salad and you have the perfect dinner. And if you’re ever looking for another low carb dinner option, this is PERFECT. It comes in at 2 net carbs before adding any sides.

Friday

You know Friday calls for pizza, right? This week we’re trying something different with this Veggie Bahn Mi Pizza. If you haven’t yet tried Bahn Mi, you are missing out. It’s so good! So why not try it on a pizza?! As usual, use a cauliflower or gluten-free pizza crust if you can. You will love this refreshing pizza!

Because dinners during the week are quick and easy, I like to spend a bit more time on dinner Saturday or Sunday. As a family, we eat all dinners together over the summer (it gets a bit too crazy during the school year) and I like to make something a bit special for this crew on the weekend. So Saturday I will be making this unbelievably good Rosemary Peach Chicken in a White Wine Pan Sauce. It sounds decadent and like it’s going to throw my macros in a tizzy, but it won’t. Even though I love cheese, I recommend omitting the mozzarella (it’s not really needed) and cut the wine back to 1/2 cup. Serve this with some roasted sweet potatoes, cauliflower gnocci, or quinoa and a salad.
