After weeks of traveling and vacation, this is the first full week I will be in the office. While we’ll be down a child (off at camp), my husband is busy at work as well and dinners to be as simple as possible. This week’s meal plan includes shrimp, a different take on taco Tuesday, my favorite farro salad, a twist on pizza, and the perfect summer Saturday dinner.

What's For Dinner Mom? Week of June 2, 2019
I know all of the mom’s out there can relate when I say that the end of the school year is crazy. Between finals and field days, pool parties, and the rush to the last day, I find us running the final weeks of school. And this year is even busier with my youngest set to wrap up his middle school experience this week. My parents are in town this week and we have luncheons, award ceremonies, parties, and graduation itself so dinners need to be quick, easy, tasty, and fit for company.

After a week where I was traveling for work, I am excited to be home. We eat dinner as a family as often as we can (and always on Sunday) so dinner needs to be something even my pickiest eater will at least try.

If you know or have followed me for long, you know I have a serious sweet tooth. And indulging in it all too often does cause me to lose focus and takes me off the rails a bit. So instead of making dessert taboo, I’ve focused that effort on finding sweet treats that are both nutritious and delicious. Here are some of my favorite easy-to-make desserts that everyone will love.

4 Ingredient Chocolate Peanut Butter Freezer Fudge
Oh my! I thought I had hit the jackpot when I tried the seven-ingredient freezer fudge but that changed when I found this Chocolate Peanut Butter Freezer Fudge. I like simple, healthy recipes that don’t take long to make and this one fits the bill. It’s perfect for a low carb night when I’m low on calories and want a little something extra to satisfy my sweet tooth.
Regular Macro Dinner: One Skillet Sun-Dried Tomato Chicken with Quinoa
I’m always on the lookout for great new dinner recipes that combine a healthy dose of good-for-you carbs, fats, and protein and was super excited to try this recipe from Half Baked Harvest. While the ingredients remain the same as the original recipe, I have changed some of the prep work to optimize taste. This was easy to make and everyone loved it. It’s great for a family dinner or a casual get-together.
Low Carb Dinner: Salmon Tacos
These tacos have been on repeat for the past two weeks. Not just once a week, either. Over the past three weeks, I think these have made an appearance on our dinner table no fewer than six times. They are just that good. And they couldn’t be simpler to make.
Healthy Super Bowl Sunday Snacks
Who doesn’t love the Super Bowl? Even if you aren’t a football fan, there is something to be said about watching the TV commercials, listening to the performers sing, the tasty snacks and being with family and friends. Personally, I don’t care about the game. But the commercials and the food? Count me in! I’ve rounded up some of my favorite healthy Super Bowl treats for you to enjoy.
Raspberry Lemon Fat Bomb
While I love chocolate and peanut butter fat bombs, sometimes I need something a bit more refreshing to satisfy my sweet tooth. So when I saw this recipe for raspberry lemon fat bombs I knew I had to try it.
